Apricot jam
Making Apricot Jam is very simple because apricots can be very easily prepared. Here is a simple, quick and delicious recipe, which is even better with ripe apricots…
Ingredients :
- Sugar: 900 gr
- Apricot: 1000 gr

- Apricots preparation: Look for very ripe apricots, wash them well under running water. Cut the apricots in two and remove the stone.
- Mix the sugar and the apricots in a cauldron (or any other cooking receptacle).
- Maceration (optional): Let sugar/apricot mixture stand a whole night in a cool place.
- Cooking: Bring the sugar/apricot mixture to a boil over high heat by stirring occasionally to prevent ingredients from sticking to the bottom of the cauldron.
- Boil for 15 minutes, stirring and skimming occasionally.
- Then reduce the heat and cook gently until it reaches a good consistency. To find out when the apricot jam is ready, you can check it by doing the cold plate test: this test is to put a drop of apricot jam on the cold plate, if it stays, it is ready!
- Preparation of jars: For better maintenance, scald the jam jars and the lids. Then, let dry before filling the jars.
- Now that your apricot jam is ready to be canned, you can fill the jars. Fill the jars, close them and turn upside down. Wait until the apricot jam is cold to store them. You have to be very careful as jars are very hot.
As many of you will find that it contains large amounts of sugar, the quantity of sugar should be varied according to your taste, you may want to use less sugar. But be careful, the less sugar used, the worse jam is preserved. Do not hesitate to leave you
